Baked Southwestern Spaghetti Squash ...

Spaghetti Squash has become a favorite food of ours lately.  We used to eat so much pasta and we were really trying to get away from that - so zoodles and spaghetti squash took center stage in our lives!

Typically on Sunday's I cook up the squash and save it in a container for later in the week.  We usually serve it mixed with some shrimp or crab and mixed veggies, and we were looking to switch things up a bit.  What better to do than try a new recipe?!? And, what's even better is that we loved the new recipe!

Baked Southwestern Spaghetti Squash


What You'll Need:
Spaghetti Squash
3/4 Can black beans, drained (I used a whole can)
3/4 Can corn, drained (I used a whole can)
1 Can Rotel
Jalapenos chopped (I didn't add these) 
1 Cup shredded cheese divided in half
Toppings: Salsa, sour cream, avocado

The Process:
1. Bake your Spaghetti Squash (I did this ahead of time)
2. Put in an 8x8 baking dish 
3. Add beans, corn, rotel, jalapenos, and 1/2 cup cheese and stir well
4. Sprinkle the rest of other 1/2 cup of cheese on top
5. Bake at 375 degrees until the cheese on top is melted and bubbling (20-25 minutes)
6. Add toppings and enjoy! 

I must say, this dish was DELICIOUS and one we will definitely be having again!

Moving ...

The hubs and I are in the process of buying a house. This has been in the works for awhile, and to say we finally found THE one makes us beyond happy!!

The hubs has been looking at houses in this area since before we met {5+ years} so he's glad that is done with. However, emotions are flowing with leaving his bachelor pad and home for the last five years.  I think he's most scared that I keep saying I get to decorate the new home since he had this one all done when he met me. :)


We have slowly started packing - although it still hasn't quite set in yet that were leaving this house. 


This house that was our first home. Don't get me wrong, I'm so excited to have our new house {which just so happens to be our close friends house!} and I can't wait to decorate. I keep texting the current owner pictures saying ... "what about this in the dining room", "do any of the fixtures use these light bulbs?" etc as we're packing. 

Otis is a bit confused by all the boxes taking over our home. We keep telling him he will LOVE his new fenced in backyard! 


So now - it's back to sorting, cleaning, boxing, repeat :)

Under the weather ...

haven't felt like my energized self the last two days. Yesterday I just barely made it through the work day. The hubs had to work the basketball game at night so I stayed home and the pups kept me company. 


Today I am feeling better {the achey icky tummy is gone} but I'm so stuffed up. So after grocery shopping it's been a lazy day filled with Netflix and more puppy cuddles.


So thankful I have a wonderful hubs to take care of me and pups to cuddle. Hoping to kick these ickies quickly!

Two peas in a pod ...

Watching these two together has been so entertaining! 


We're pretty sure that Otis is going to be missing his BFF ...




I must admit it is nice having a built in playmate for Otis. We've never seen him crash so hard!!


Here's to one more week with two pups!
